Radish Salad with Curry-Orange Dressing

This is a variation on a salad I originally made with tomatoes. I decided to give it a whirl with crunchy radishes instead, and fell in love with the results. It's a spicy, sweet, tangy, and salty explosion of flavors! —fiveandspice

What You'll Need
Ingredients
  • 1 cup orange juice
  • 1 tablespoon olive oil
  • 1/2 teaspoon curry powder
  • salt to taste
  • 2 cups radishes, washed and roughly chopped
  • 1 cup crumbled feta cheese
  • 2 tablespoons chopped fresh mint leaves
Directions
  1. In a small saucepan, bring the orange juice to a boil and cook it until it is reduced to about 1/4 cup (about 20-25 minutes). Take off the heat.
  2. Whisk the olive oil, and curry powder into the orange juice. Add salt to taste. Toss the chopped radishes with the dressing.
  3. Divide the radishes between 4 plates. Top with the feta cheese and chopped mint.

This was a really nice way to use up radishes from my garden. I used OJ concentrate instead of boiling down fresh. I think it worked fine here. My radishes were on the peppery side so I added a little bit of honey to the dressing to balance. Like most chopped salads it has gotten better as it sits in the fridge. The curry powder adds such an interesting depth to the flavors. Definitely a keeper.

Love this recipe! I'm obsessed with radishes, but would never have thought to pair them with curry. The oranges bring it all together! Thanks for this one!!

This looks SO good! Does it hold up well to be mixed ahead of time and served a few hours later? Or best to make right before serving?

I made this new year's eve and frankly, I was really skeptical! But it was delicious and I will make it again. I think you could also adopt the sauce to a number of other things. Thanks for the treat!

Yum! I love the idea of dressing radish with citrus and curry but.... I don’t have OJ 😞 during these quarantine times, I’m thinking of trying a riff on this with a bit of lemon juice instead, and maybe some maple to replicate the sweetness of orange. Please let me know if anyone’s tried an alternative!

Oh my goodness, this was off-the-charts DELICIOUS!!!! I had to restrain myself from eating the entire batch, but I've left some for tomorrow's lunch. Now I know exactly what to do with fabulous fall radishes.
